What a lot of people don't realize is that freeze dried food takes a crap ton of water, hot water to be exact. So for example 2 1/2 cups of freeze dried chicken takes two cups of hot boiling water. It adds up.
Better have lots of purified water and a water purifier if using say pool water or rain water. plus fire of some sort. Which is why I bought lots of firewood and a solar cooker.

Has there been an uptick in prepper activity since the election? By the time I'm on that forth or fifth can of gloopanoff, I might be rethinking the good of having survived the initial invasion.
I ordered a case of optimism from Amazon, but porch pirates beat me to it. Still, chin-up.

I've laid off the ammo for food, purified water, even though I have enough purification equipment to filter the swimming pool. The wife was getting annoyed, until trump lost. Oh and lots of ground espresso that's vacuum packed. And other odds and ends one could use for trading like sugar, salt, spices. Two cords of firewood.
TP, for awhile Costco ran out of toilet paper and their own paper towels.

So yes, I've noticed a few things that are spotty. I don't want to have to go raid the neighbors too soon. lol

Back to meals, the time of year is just exactly perfect for this: a bundle of those new asparagus bout as thick as a pencil, and a big handful of new little Brussels sprouts bout the size of a fat grape. Butter and soy sauce, so simple but so tasty. Over brown rice with feta cheese was the combo tonight.

I'm still adjusting to not having a gallbladder and having to learn to stop eating before full, the latter being the most difficult. Still haven't worked up the courage to have a platter of nachos, my go to football season meal.
On a sad note, Jake (my 9 yo Boxer) was diagnosed with an aggressive form of cancer in early Nov. and is terminal. We celebrated our last Thanksgiving with both of us over eating. He's doing well as he doesn't know he's sick and the disease has not as yet caused any physical debilitating or major pain. So he remains active and normal for the time being. They gave him 2-4 months and we shall make the most of it.
Today's planned lunch meal fare is Catfish Almondine (sauted in butter, salt/pepper, lemon juice & zest, slivered almonds) with sides of steamed cauliflower and broccoli. Avoiding fats is becoming quite problematic, especially butter.

I hear you about over eating, one of my favorite past times. Especially at my large meal, I'd eat more than a pound. But it took me two months of cooking the proper amount to finally fell sated after like a half pound meal. I read where it takes twenty one days to change a habit. Stay tuned.

It was the perfect time to go to the natural foods store, as I'd just had a sandwich. Bad to go when hungry. Since I could think straight, I planned dinner because there was this baseball sized Portabella right over the bin that held a fresh shipment of those big-grape sized Brussels sprouts.

Now, I'd already planned to head a couple blocks over to Chico Locker and Sausage because yesterday I bumped into the smoker dude from there, told me Salmon was coming out and would be ready on Monday. so, it will be sprouts and shroom in butter and garlic over brown rice with smoked Salmon. If I hadn't've had that sandwich, I'd be cooking it now.

Beer will get you through times of too much garlic better than garlic will get you through times of too much beer.

on edit, I have to say that I added a few dashes of Lea and Perrins to the Portabellas, which gives the whole shebang a meatier taste.

Making a batch of Mexican Pozole for afternoon repast. Got my fingers crossed it's a good batch. Will let y'all know one way or the other.

EDIT: Pozole is quite tasty and hardy, mildly spicy. With condiments of fresh chopped red onion, cilantro and squeeze of lemon or lime juice, absolutely delicious!!

ADDENDUM: Well, a big shot of Tajin Classico in bowl made it a bit too spicy !!

Was going to make Menudo (basically same recipe as Pozole) except the cost of beef tripe, as with tamales, this time of year, is a bit expensive compared to just pork butt roast.

It is a PITA to make, but worth the effort. Spanish, Mexican and TexMex cuisines are worlds apart. Paella is a real PITA IMO, but worthy to prepare. Mexican/TexMex, wine is not a normal ingredient as in Spain, but Tequila is a fine replacement!
The link you posted is a good guide line for Pozole, but misses beer, white pepper. Lard rather than oil. I used Hatch canned green chili peppers, one mild, one hot and ancho chile powder in lieu of the homemade brew she shows at end of recipe. Left out the Jalapeno and Serrano this time in attempt to reduce heat spicy. Took about half a day to prepare. That is my breakfast this morning with tortilla's. Had my last bowl last night about 7 PM after snacking on it all afternoon. ¡Provecho!

I agree the cuisines are different, though they are all Hispanic in origin. Paella isn't that difficult, sheepherders made paella on a camp fire. Seems like everyone in Spain has a paella pan and basic ingredients are rice, olive oil, chorizo, seasonings or if it's available chicken or seafood instead of chorizo. Saffron is too damn expensive, so people use turmeric to give it the orange color.

The shrimp look like they were very tasty with their cocktail sauce.

Don't know if anyone has noticed but the price of extra virgin olive oil has gone way up. I don't fry anything so I don't buy corn or seed oils, I just use EVOO. I used to buy Star which is Spanish, but for some reason Walmart discontinued it. Occasionally I'll find it at another store, but they don't stock it consistently. Aldi has a Sicilian EVOO which is good and it's reasonable.

Europe has had extreme wildfires from Greece west to Spain. Many of the trees that burned were olive trees, so besides post COVID inflation, the loss of olive trees has resulted in big EVOO price increases.

I hear you. For a 750ml bottle of locally-grown EVOO from California Ranch, they clip me forty bucks. It's a mild and tasty oil. I pay for my thrills knowing the trees are thirty minutes away. My thought is they hired several extra virgins, and that padded the labor cost and raised the price. ;-)

I haven't tried any California EVOOs yet, I'll have to try one. EVOO is as natural as it comes.

A new study in the news about seed oils fueling colon cancer.
The study was not able to definitively connect the lipids detected in the colon cancer tumors to any specific food or oil, however.
So no cause and effect. It's one study and has to be replicated, but it's getting attention.
