My Last Meal

I enjoy cooking and baking bread, so thought I'd start a thread about some of the meals I experimented with or really enjoyed. I eat really good for a poor old man. My appetite covers shrimp, scallops, beef, pork, chicken, fish - beef and shrimp being my favorite. Still making sour dough breads mostly for dipping in the sauces that spring from preparing meals. Make my own pestos, chimichurris, gravies, sauces. Make a lot of ceviche, shrimp, scallop, fish or a combo of any of the three. So join in if you care to, would love to here your experiences.

I can't finish reading this post until I eat something. >drool< Nah: as a mostly vegetarian, I find I eat fish ten to fifteen times a year, especially local fish tacos or grilled shrimps. Have you ever made shrimp pesto over linguini?

You betcha !! Plan to harvest basil today for fresh batch of pesto.
This summer has been a bitch on my peppermint and spearmint plants. Having trouble keeping them alive in all the heat and currently not one mint leaf. Want to try adding some to a basil pesto for additional punch.

Yes that sounds mouth watering Wino. I mostly eat chicken, turkey and fish, I rarely eat beef or pork. I've cut back on eating out, even fast food. I don't turn on the oven this time of year. During the winter I'll get a hankering for a meatloaf so I'll buy 93%-96% fat free ground beef and make a mostly vegetable meatloaf. Crockpots/slow cookers are great, I'll do chicken breasts or thighs with a lot of vegetables.

I eat a lot of salads and sandwiches this time of year, even things like chopped olive sandwiches. And occasionally a Greek salad with rotini, sliced olives, pimento, artichoke hearts, mushrooms, pickles and feta cheese. I love pesto and spinach linguini.

Yep, I'm big on salads, particularly from scratch Caesar Salad. Trash salads with whatever is in vegetable drawer and with Olive Garden dressing. Sandwiches from Reuben's to BLT to grilled cheese to cinnamon toast - PBJ has fallen out of regimen - lost my sweet tooth.

This may shock you, but peanut butter need not only be accompanied by jelly. Try a sandwich with mustard and pickles and crunchy pb on whole wheat. Now, I also add pink onions, but not everyone is a big fan of "a nickel slice of raw" on sandwiches.

Sounds like a "stoner" munchie sandwich! LOL May give it a try, but all I have in dark bread currently is pumpernickel (for my Reuben's). But today is burgers and sides at neighbors.

Not much of a carnivore anymore, but I do like making my own bread. Beats the crust off anything store bought. I have to admit to a bit of cheating, as I use a bread machine and sometimes a stand mixer for the kneading, though I do the rise and bake in an oven.

Fresh baked bread, a cup or three of fresh roasted coffee. Not the last?, I hope.

I'm down with the Sour Dough. The wife started feeding her own batch during the pandemic and has kept it going. It is truly amazing how many things she has made using it. Cookies, cakes, muffins, and an assortment of different style of breads. All of them an adventure, but most are surprising good.

I always have a bottle of peanut butter in the fridge, sometimes I just want a teaspoon of PB to settle a craving for peanuts. Instead of a regular BLT, I make a BAT that is turkey bacon, avocado and tomato sandwich. Never got into bread making, but maybe it's something in my future, bread machines make it a whole lot easier than pounding dough to get the air out. Nothing beats the taste of homemade bread. I settle now for a good bakery bread with extra virgin olive oil on top or I dip the bread into olive oil. Sometimes I just want a bowl of steamed mixed vegetables for dinner and a slice of bread.

From time to time I get the urge to collect a bread machine, especially when my favorite kind of bread is sold out at the Co-op. I may do it next month. It's true: there's nothing like freshly baked bread.

I have a bread machine, but haven't used in years. I prefer the stand mixer and my kneading and regular Lodge cast iron bread pans 9x5 and 10.5x9 or French loaf molds or free hand rounds. I've always found it difficult to not eat oven fresh bread and seldom let one loaf cool down before slathering with butter.

As far as my research shows, there is no known immediate overdose for butter. With respect to kneading and so on, I'm a lazy bastid these days. My parents-in-law had a bread machine and would make a loaf when we visited. Nothing like walking into a house that smells like baking bread. Heck, I think I gained a pound and a half just thinking about it.

I limit my dairy to some kefir in the morning, it's a probiotic that gets through the stomach aid into the intestines. And occasionally some feta cheese on a salad. I used to eat a lot of dairy especially yoghurt and it may have contributed to the cancer I had, so I eat a minimum now. I love different types of cheese, especially a sharp cheddar, different blue cheeses, Mozzarella, Swiss...so it's been tough.

Growing up either my mother or one of my grandmothers was always making bread, there was always a sourdough starter at home and usually some loaves rising. During the winter I'll replace a slice of bread with a red potato and other veggies.

I don't care about my last meal. What I want is complicated.

I have tended to be more of a gourmand than a gourmet, and my current BMI reflects this. I don't need fancy, even if I occasionally enjoy some fancy.

That said, I tend toward simple recipes. Fresh (or frozen) veggies like green beans, broccoli, okra, kale, and the like, steamed (or in the case of okra, lightly sauteed), suit me just fine. I'm from a part of the country such that country ham is considered a staple (my avatar is the Virginia state seal, even though I live in Kentucky), but as much as I like it, I can only eat so much of it because of the sodium content. Small-farm/local butcher beef and chicken get to my house from time to time, too. I like buying local for such things when I can.

A standard breakfast for me is a couple of scrambled eggs (butter to lubricate the iron skillet), a handful of shredded potatoes (fried in a dollop of extra virgin olive oil), and a couple of small slices of country ham. Alternate is to cook some canned corned beef hash instead of the taters and ham.
Eventually I'll figure out this signature thing and decide what I want to put here.

Somehow I can't do breakfast until around ten. I might eat some toast when the coffee starts to burn, but I don't wake up hungry. My big meal is in the late afternoon. I try not to eat for three or so hours before bed, when I'll have a snack. By then my big meal is pretty much digested.

Holy Crap !! You guys make me feel like a glutton !! I'm basically a garbage gut as there is little I won't eat and generally have one major meal a day. Breakfast is weekends only or Holidays. I eat healthy with lots of veggies, fruits (fresh, dried, preserved). A lot of my eating most anything habits stem from 3rd world ex-pat days when I was afraid to ask what I was eating. Not to mention my childhood mother's plea to clean my plate whilst thinking of those starving around the world - I'm a guilt eater I guess !! LOL
Ran across a recipe in past Sunday paper for a Tequila butter shrimp pan saute. Will give it a go before weekend.
