Help! V-E-G-A-N-S!

My house will be invaded by the wife's 36-year-old son and his family today.
Vegans! Yikes.These sick people are not carnivores. They aren't even omnivores.
What do ya feed 'em? I suppose venison and goose sausage are out of the question.
Any of you got a good vegetarian recipe or two? Thank you in advance...

I can understand vegetarians, but vegans usually seem to be idiots trying to starve themselves & feel superior for doing so.
My best vegetarian recipe is leek/potato soup. Not vegan safe, initially, but you could mod it I suppose by replacing the cream and butter with what they'll eat. Personally I'd just say it's vegetarian, which is is, and leave it at that. If there are any children in the family they _need_ the fats.
In a nice big stock pot:
4 cups veggie stock
4 cups water
2 leeks, washed & cut in thin slices. I go about halfway up the greens.
1~2 lb potatos, skinned and cubed
couple of carrot, sliced
couple stalks celery, sliced.
salt & pepper to taste. Needs more than you'd think. My recipe has a 1 tablespoon of salt notation and I try to hold salt down.
simmer for 2 hours.
Use blender to smooth it all together, or even a masher & return to pot.
Add 4 tablespoons heavy cream & one stick of butter. Stir till butter melted.
Add 2 tablespoons minced parsley
Add 1 lb fresh mushrooms
Serve with a good sourdough. I prefer it hot, though it can be served cold as well.
The other fast safe & easy option for them is spaghetti with plain tomato marinara. Just buy a vegan one at your local food co-op and be done.

Grilled veggies - already planned, of course. W/portabella "burgers".
Excellent! My leeks are gonna get eaten! They are perfect right now. I have an overabundance as the plants i bought were mismarked as onions.

Get a jalapeno infused olive oil to marinate the grilled veggies in. You will not be sorry.

I'll be making some of that next week. Got a good deal on peppers and virgin-grade oil through the co-op.
There's a vegetable that when grilled up tastes like sausage, I'll see if I can find out which one.

How about a nice bruchetta? Bread, olive oil, garlic, tomato and basil?
Edit: sun dried roma tomatos soaked in white wine might be nice.

No-meat Chili beans, Tortillas, Salad, Corn.
Had it last night. It is our go-to camping meal.
It also works for the Mexicans. David's dad is 99 and his mom is 98.
When no one is looking you can throw a handful of pre-cooked ground meat into your bowl.
Stringy beef is nice too.

Borracho beans
-Pinto beans (Bush's brand is best)
-Veggie bacon (Morningstar)
-tomatoes
-Cilantro (fresh coriander leaves)
-onions
-Serrano or Jalapeño peppers
-salt
-a beer
Heat large pot, fry veggie bacon in a bit of oil (you may want to add a bit of liquid smoke flavor later if the "bacon" smells flavorless), throw in chopped onions, let them onions soften a bit, throw in chopped tomatoes, let all of this stew a couple of minutes. Dump the pinto beans into this, add water if needed. Add half a bottle of beer (or the whole damn thing). Throw in the cilantro leaves and peppers. Check for salt, it may not need it. (a bit of liquid smoke flavor, maybe) Let it all cook for about 15-20 minutes.
Voilá, borracho beans.
A variation: subsititute the veggie bacon with "soyrizo" (mexican chorizo sausage, avoid Yves like the plague), use green bell peppers instead of cilantro. No smoke flavor on this one.
Recommended soyrizo brands:
These goes great as a side for all kinds of bbq's.

I always find it interesting that people with emotional food issues expect others to cater to them.
If they were good Vegans they would show up at your house with all kinds of food they would prepare for YOU to show you how wonderful it is.

+1 I don't mind catering to guests (I'm a fat ass, I love to cook, sue me), but I draw the line at eating like vegans, i'll cook them whatever they want so long as the keep quite about me eating my Ork burger.

Good luck ever eating out again. As much it is a struggle to cook with a Vegan, their dining options at most restaurants/cities is very limited at best. I hope you live in a hippie-dippie city with vegan-friendly menus or otherwise you will be doing most of your eating at home. The good news is that most people who go vegan usually revert back to omnivores or (at the very least) vegetarians.
Going vegan is a huge shock to the system and I have only know of a handful of people who are legitimately healthy on that diet. The important thing is that you can't let them dictate what you eat.
As Anthony Bourdain said, "Bacon is the gateway drug of vegans."

Check for a vegan Indian restaurant in your area. They're the only ones that really pull vegan off worth a damn. There's one in Renton that I'll actually chose to visit.
As suggested earlier, Morningstar fake meat products are actually pretty good. They're in the frozen section in large supermarkets.
Asian with tofu can be decent. (CAN be, depending on how it's prepared.)
Seitan is to wheat what tofu is to soy beans. It can fool you, too, and is pretty damn good in some Asian dishes. It has the advantage of being gluten, so if they start screaming you know they're vegan just to be a pain in the ass.
Oatmeal for breakfast, maybe lay in some soy milk. Let them take you out to the Asian place for lunch and the Indian place for dinner.

Actually, I was raised vegetarian, and my parents are now both vegan. I would suggest letting them procure and prepare their own meals, because frankly if you're not vegan, you simply don't understand the nuances of the diet. Try this cookbook ; I've known the author my entire life, and will vouch for about half of the recipes. That's all I've tried.

Beer as well as most breads use yeast, which is off limits for some vegans, but not others. Honey is a product of animals, and consequently many vegans won't eat that either. Honestly though, I haven't noticed a lot of consistency on the finer points from one group to the next. My personal view is that, unless it's done for medical reasons, most people who *choose* such extreme diets do it(possibly subconsciously) just to be fucking special, and to force the world to bend to their will. but that's just an opinion.

two years ago my daughter comes home for summer break and announces that she has become a vegan. I was hoping it was some sort of sandwich.
