My folks used to stay quite a bit at the La Quinta - Convention Center. Not the most upscale place, but the location is ideal since you're right by the light rail line with quick access to downtown. Surely you can at least get a country ham biscuit? I'd die if I didn't have access to a good biscuit. There are campground options in the city. Very very soon there will be a google map that you can access that has several campgrounds listed. You will be able to check out how close they are to the activities. There is also a hostel very very close.
